06 Ottoman Croissant Roll
Mixed wheats. Nuts and honey.
Kipferls were invented in Vienna in 1683 to mark the defeat of an Ottoman invasion. We mix the flavours of baklava with this half bread, half pastry.
︎ 03 Hydromel
A meeting of honeys; one fermented into wine, one to enrich this leavened pastry-like bread.
︎ 08 Grape Juice Ottoman flavours cross with pastry and link to Sira, a "non-alcoholic" drink of slightly fermented juice.
